Who would have ever imagined that a humble batch of cupcakes could restore one’s faith in such a tarnished treat? But that’s exactly what Miss Pink’s West Virigina-styled carrot cake cupcake recipe will do.

From a old, secret recipe book that only Mizz Pink had access to until in her death in 2003, these “eye cakes” (as she called them) are to die for. No sultanas to gum up the texture, no pineapple to muddy the water. Just a fluffy hillbilly spice cake flecked with sweet grated (organic*) carrot studded with walnuts.

And Mizz Pink’s special touches of Lemon and orange zests add a subtle note of citrus to the generous swirl of cream cheese frosting, which mellows the whole thing.

Bake these cupcakes and join the legendary unsung queen of the bakehouse, Miss Pink, in her eternal crusade to raise the lowly carrot cake to the auspicious heights it deserves!

Carrot Cupcakes (use organic ingredients!!)

1/2 cup brown sugar
3/4 cup vegetable oil
2 large eggs
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1 teaspoon cinnamon
pinch of salt
zest of 1/2 lemon
zest of 1/2 orange
2 medium carrots, finely grated (definitely organic)
1/2 cup walnuts, finely chopped

Preheat oven to 350 degrees and line a 12-cup muffin tin with baking papers. With a hand or stand mixer blend brown sugar and oil, then whip in eggs until a smooth, emulsified liquid results. Stir in flour, baking soda, salt and zests. It will be dry at this point, but add the carrot and you will see how the liquid in the carrot moistens things up nicely. Mix in walnuts and distribute batter evenly into muffin tin. Bake for 22-25 minutes or until golden brown.

Cream Cheese Frosting
4 ounces cream cheese
2/3 cup confectioner’s sugar (I increased to 1 1/3 cup so that it would be stiff enough to pipe)
2 teaspoons lemon juice

Whip up ingredients until fluffy and lump-free. Ice by hand or with an icing bag—I find it easiest to shove the frosting into a Ziploc bag and then cut off the tip. And – as Miss Pink sez – don’t skimp!

*Miss Pink grew most of her own ingredients and never used fly spray!!!
